This week we will be having a special market to support the fabulous non-profit organizations in New Westminster. With over 15 non-profits attending – each one will have their own booth set up – this market is sure to be a blast! Come join us and learn about some of the non-profits in your neighbourhood, attendees include (but are not limited to!): the Wildlife Rescue Association, Fraser River Discovery Centre, Royal City Gogos, FortisGas, BC Hydro, Vancouver Area Cycling Coalition, Abreast in a Boat, and many more!

We will of course have all of our wonderful vendors in attendance, as well as Art in the Park and out Kids’ Craft area – sponsored by Derrick Thornhill. Music this week will be provided by the wandering jazz duo, Quinn and Ogilvie. The Heritage Grill continues to support all of our entertainment at the market. My Garden Footprint will also be in attendance this week, and they will be giving out prizes!

You can reach the market via transit by taking the 106 bus or the Skytrain to Columbia Street Station and walking to the market at 4th and Royal. Parking is available in the neighbourhood or at City Hall’s lot after 4:30. Please respect our neighbours. Our bike rack has temporarily gone missing, but you can drop your bike off to the fine folks at our info desk at the top end of the market.

This was my first try at gluten free cooking and it turned out pretty well. I halved the original recipe, as suggested on the website I read it on, and whipped out my brand new cake pan and got started. It was really easy to make, probably thanks to the great gluten free flour mix from High Crow Gluten Free Foods, and ended up tasting really delicious! I had a hard time finding Gluten-Free Sour Cream and, according to Google, only low fat Sour Cream has gluten in it anyway, so I just used the normal stuff. I hope you enjoy this as much as I did!

For other first time Gluten Free bakers: the gooey-ness of the batter really surprised me, it’s a lot stickier then regular cake batter, and I was sure that I was doing something wrong! But have no fear, it all worked out in the end!

Ingredients

  • ½ cup unsalted butter, room temperature
  • 1 ½ cups sugar
  • 3 eggs
  • 1 ½ cups Multi Blend gluten-free flour mix
  • 1 teaspoon guar gum or xanthan gum
  • ½ teaspoon baking powder
  • ½ cup gluten-free sour cream
  • 1 teaspoons vanilla extract
  • Confectioners’ sugar for dusting top of cake
  • Whipping cream
  • Strawberries
Preheat oven to 350 degrees.
Butter a 9 inch cake pan.
Put the sugar and butter in a medium sized bowl.
Mix the butter and sugar together until smooth.
Add the eggs one at a time, mixing well after each egg.
Mix together flour, xanthan gum and baking powder together in a bowl.
Add flour mixture to the egg mixture, blending well.
Add sour cream to mixture, and blend well.
Pour mixture into cake pan.
Bake the cake in your preheated oven for 30-40 minutes (until a toothpick comes out clean!).
Let cool in pan for 10 - 15 minutes and then put a cooling try to cool completely.
When it is completely cool, garnish with whipped cream and strawberries and enjoy! Nom nom nom!
Optional: Make remaining cake look like PacMan to make your roommates laugh when they get home!

This week at the market markst the first appearance this season of favourite musical guest, Chris Messytone. As usual, the fabulous Heritage Grill is sponsoring our music. Make sure you bring the kids, they wouldn’t want to miss out on our kids’ craft area, sponsored by Derrick Thornhill. This week our non-profit is the New Westminster Public Library. Check out Art in the Park’s featured artist in the middle of the market, Cliff Milne!

You can reach the market via transit by taking the 106 bus or the Skytrain to Columbia Street Station and walking to the market at 4th and Royal. Parking is available in the neighbourhood or at City Hall’s lot after 4:30. Please respect our neighbours. Our bike rack has temporarily gone missing, but you can drop it off to the fine folks at our info desk at the top end of the market.

Did you know RCFM is on Facebook? We are! And we have many awesome fans who like to talk food and all things market; “like” us on Facebook and join in! As requested by our loyal Facebook fans, here is a delicious (and easy!) Strawberry and Spinach Salad. This salad was super easy and the dressing that went along with it was great — just make sure you don’t add too much or things could get a little soggy.

Ingredients:

  • 1 bunch spinach (buy here)
  • 10 large strawberries ** I only had small strawberries, so I used about 20 (buy here, here, here or here)
  • 1/2 cup white sugar **or you can use honey (get your honey here)
  • 1 teaspoon salt
  • 1/3 cup white wine vinegar
  • 1 cup vegetable or olive oil
  • 1 tablespoon poppy seeds
  • Optional: a handful of caramelized pecans add a nice touch too!

 

Have your recipe handy.
Wash and dry your spinach.
Cut your spinach into bite size pieces and put into a medium bowl.
Wash strawberries, slice them and add them to spinach.
Put sugar,
salt,
vinegar,
and oil in a small bowl.
Blend, mix or stir them together until smooth.
Stir in poppy seeds.
Gradually pour over spinach and strawberries. Being careful not to add too much!
Toss and enjoy! Yummy!

June has just flown by, and with it our first month of summer markets! Strawberry season is upon us once again, so be sure to look out for those from our produce vendors. With Canada Day Friday, make sure you stock up on those BBQ necessities! What’s your favourite thing so far? Or what are you most looking forward to for the rest of the summer?

This week our musical guest is Cary Grigg of Fiddlestix, who mixes Celtic, Métis, Old Time, Swing, Pop, Rock and original music. As usual, the fabulous Heritage Grill is sponsoring our music.
