Summer Pasta Salad

June 17, 2011 By newwestfarmers

This pasta salad is perfect for summer. And, even better, at least half of the ingredients can be found at the market! It was super easy to make and turned out very tasty. I did make a few changes to the original recipe (provided by Kirsten and Wendy!) and those are noted bellow. Enjoy!

Ingredients:

  • 4 Medium Tomatoes (buy here or here)
  • 4 Garlic Cloves (buy here or here)
  • ½ cup Fresh Basil (buy here or here) *I had a little less than this due to me not noticing my basil was going bad 🙁
  • 1 tbsp. Fresh mint (buy here or here)
  • 1 tsp. Salt
  • ½ tsp. Fresh Ground Pepper *I didn’t have fresh ground pepper, I just used the normal stuff
  • ¼ tsp. Hot Pepper Flakes
  • ½ cup Olive Oil
  • 2 cups Pasta Shells *I used Fuseli pasta instead, that’s what I had around, still good.
  • ½ cup Freshly Grated Parmesan Cheese
  • 1 cup Cream Cheese *I only used half a cup and we could still taste the cream cheese flavour
Have your recipe ready!
Coarsely chop tomatoes up.
Cut the garlic up very finely.
Chop Basil.
Chop Mint.
Mix together above ingredients in a bowl.
Add Red Pepper Flakes.
Add Salt and Pepper.
Add olive oil, mix it up and let stand for 2 - 3 hours. Mixing occasionally.
2 - 3 hours later...... Boil the pasta!

Drain pasta, transfer to large bowl and spoon 1/4 cup of the liquid from the tomatoes into bowl. Toss with the pasta to coat.
While pasta is still warm, add Parmesan cheese.
And the cream cheese! Mix until the cheese's begin to melt.
Mix in tomato mixture and stir until mixed!
Enjoy! Nom nom nom!

The sun has been (mostly) shining all week, and that’s a good thing! The farmers are all pleased to see some more summer-like weather. It’s been a slow growing season so far, but the market season is up and running. Did you make it last week? What was the best thing you picked up?

This week at the market we are pleased to have local singer Curtis Parry. We are thrilled that the entertainment this season is sponsored by The Heritage Grill. Allyson Grant will be in attendance painting faces and don’t miss the kids’ craft area courtesy of local realtor Derrick Thornhill. Our non profit this week is Urban Academy. New this week, check out the Art in the Park featured artist in the middle of the market!

You can reach the market via transit by taking the 106 bus or the Skytrain to Columbia Street Station and walking to the market at 4th and Royal. Parking is available in the neighbourhood or at City Hall’s lot after 4:30. Please respect our neighbours. A bike rack is located at the lower end of the market, or you can always drop it off to the fine folks at our info desk at the top end of the market.

Opening Market Success

June 11, 2011 By newwestfarmers

Although the day looked grey to begin with, by the time 3pm rolled around the sun was shining and the cannon was ready. Yes, that’s right. There was a cannon. This Thursday, June 9th, marked the opening of the Farmers Market for the summer season. It was a great success and I have the pictures to prove it!

I followed these lovely signs to get to the market! (Kindly put up by our awesome volunteers!)

It took three of these fine gentlemen to finally get the cannon going. But once they did, it was a great success!
Because the weather was so nice, we were able to enjoy some excellent Art in the Park!
Check out these tasty veggies from Apple Barn Pumpkin Farm!
Those excellent tunes you heard were from.....
One vendor even brought their pet chicken!
Did you check out our info booth? There's more then just information here, we also sell RCFM reusable bags and t shirts!
Here's on of the great samples the vendors had to offer! Some tasty Strawberry Fig balsamic vinegar from Nonna Pia's Gourmet Sauces!
Check out Sunrise Pita Company's excellent beef empanadas! Yum!
Serious Sausage? Seriously delicious!
I finished my trip to the market by enjoying this tasty, tasty snack! So good!

Salsa

June 2, 2011 By newwestfarmers

My friend Kirsten suggested making this Salsa for a party I had over the weekend. It was super easy to make and very tasty. Personally, I don’t like cilantro, so we made two batches, one with and one without, and they both went over great.

Ingredients:

  • 3 BC Tomatoes
  • ½ Red Onion
  • ½ White Onion
  • 2 Green Jalapeno Peppers (we took the seeds out, but if you want it extra spicy leave them in)
  • 2 Cloves of Garlic
  • 2 Limes
  • Cilantro
  • Salt and Pepper
Chop tomatoes into small pieces
Chop half of red onion into small pieces
Chop half of white onion into small pieces
Chop 2 garlic cloves into small pieces
Chop up jalapenos
Finely chop a few sprigs of cilantro
Mix everything together in a bowl
Add a dash of Salt and Pepper
Cut limes in half and squeeze into bowl
Mix again and enjoy!
